Fudge fills most of us with warm memories of childhood - time spent waiting in line in a candy shop as the warm aroma of fresh cooking fudge filled the air. Looking through display cases filled with treats, sampling all the different flavors before finally choosing your favorite. Or maybe it was a tray of goodies, lovingly prepared by a beloved family member for special occasions.

No matter where or when these memories came from, the fudge was always smooth, soft and intensely flavorful - something incredibly special.

We've been chasing those memories as we try to create the best fudge imaginable. It starts with using only the best ingredients. We sampled and tested dozens of different chocolates from across the world before finding the perfect cocoa to deliver the smooth, deep and rich flavor we desired. Being in Vermont, we knew we needed Vermont Maple Syrup in our Maple Pecan Fudge. Our nuts are delicately roasted before they're incorporated to make their flavor really shine. Everything has been tested, re-tested, tweaked and reformulated countless times until the end result is absolutely perfect.

Just as important as what we put in the fudge is what we don't put in our fudge. We were shocked when we first started making fudge to learn that the vast majority of shops now buy their fudge in ready-made powdered form. The result is bland, disappointingly uniform and filled with ingredients that aren't necessary when you make real fudge - like palm oil and high fructose corn syrup. That's why we are proud of the fact that our fudge is made by hand, and does not contain any palm oil, high fructose corn syrup, preservatives, stabilizers or any other unnecessary ingredients. Many of these so-called fudge companies are calling it fudge but it is not technically real fudge which is by definition a sugar candy cooked to soft-ball stage and then churned while cooling.

We cook our fudge in kettles, in small batches, making careful adjustments for humidity, constantly monitoring the temperature to ensure that our end product is as smooth and soft as possible. This means there will almost always be variability in the end product, but the results are so much better than anything you could get from a mix. Fudge is sold by the half-pound and comes inside a beautiful, eco-friendly box.

We also make our fudge using fresh Vermont goat's milk. Anyone who knows us knows that we love goats. We have been raising dairy goats for more than 10 years and have been praising and using goat milk in our products ever since. Traditionally, goat's milk fudge was made by small farms for supplemental income. While it doesn't impact the overall flavor of the fudge, we're continuing that tradition for everyone that loves goats, believes in the health benefits of goat's milk, has difficulty digesting cow's milk or just wants to try something new!
